When we decided to tackle the topic of staff, the first thing that came to mind was bread, as in the staff of life. The second was the ritual of the staff meal, sometimes called “family meal” in restaurants. It’s that lovely act of sitting down for a meal together either before or after the chaos of a busy shift.
With this book, we created a menu inspired by the warmth and we’re-in-this-together-ness of our favorite staff meals. And what better use of economy in the kitchen than to create the whole meal with yesterday’s bread?
